We finally arrived at Camp LeJeune at 3PM or so. Had to pick up all the food, ice, utensils, napkins, etc. We got a late start because we were waiting for word on whether we are going to Camp LeJeune or Cherry Point. At 9Am the decision was made to trust the weather would hold and off to Camp LeJeune we went.
Once we got past the post security we headed off to Onslow Beach. We got setup and had to wait some for some Marine’s to part the area. Fired up the Big Green Eggs and let them stabilize. Not an easy task since we had a constant sea breeze blowing. None the less we endured and got 26 pork butts rubbed up and loaded on the Big Green Eggs.
My son and I settled in for the night after devouring a couple ribeyes and baked potatoes. Sleep was somewhat elusive as that breeze we had suddenly stop and every mosquito in North Carolina attacked. To compound that the eggs were giving me fits. With all that meat in eat one it was a small struggle to maintain the proper temps.
Along around 7:30AM we started pulling those butts off the cooker and letting them rest in the coolers. My step-neice, her boyfriend and his son showed up to get ready to serve. The marines started showing up at 10:30AM or so.
By 12:30 the serving started. and by 2:30PM everyone was fed and happy.
