Who is Celtic Spirit BBQ
It all started way-y-y-y-y back ... Well it did. I have been cooking outdoors since I was Boy Scout at 11 (1964). When I was 12 I finally asked my Scout Master what the things wrapped in canvas were for. He told me they were Dutch Ovens. He walked off and returned with the Boy Scout Field Book.
I read every word I could find in the book about Dutch Ovens. I went on the internet (oh wait, the web wasn't invented yet). I went to the local library and checked out books on Dutch Oven cooking. Our Troop never ate boiled meals again.
When I was 16 I moved indoors and helped my mother cook for her church's weekly social. Soon it was my mother helping me. This is where I learned to cook for large numbers.
Over the years I more or less cooked as a hobby. One day someone said put your food where your money is. I did and started catering part-time. I still mostly cook outside, but as you can see from our menu it's not just hot dogs and hamburgers.
With the purchase of my Big Green Eggs my menu has grown to some not so traditional BBQ items. BBQ is a cooking process. Foods are cooked with lower heat over a longer period of time. The hot and fast stuff is good too, but that is grilling. The Big Green Egg can do both better than your own oven\stove can. I'll leave the debate over charcoal, wood or gas to others. The Eggs use charcoal in the form of Lump. Very few people complain about the food that the Eggs produce.
Last year, I was once more told to put my food were my mouth is and I started competing in the KCBS BBQ circuit. I haven't won much, but I am steadily moving up in the rankings.
